Red and white (AOC) Châteauneuf-du-Pape wines have an asset, in addition to their world renown, to be a southern wine of the Rhône valley, which has the specificity to be served with many dishes thanks to the great subtility of its flavors.

With a red Châteauneuf-du-Pape
“Les Cailloux” cuvée is a red full-bodied and subtle wine, which has a very direct contract on the palate but with a finesse that releases fruity aromas. This wines ages extremely well thanks to these specificities, it will go well with many dishes even more if you decant it at temperature of around 16°C.
Taste the red as an aperitif, as a starter or with cheese
The powerful taste of Châteauneuf-du-Pape will make it perfect with dishes which have a strong taste and strong subtle aromas: so, as a starter or served as an aperitif, it will delight the palate of game lovers or of complex tastes of underwood.
Indeed, serve it with coarse pâté made with pork, saucisson or also with appetizers made with mushrooms boletus or especially truffles.
However, the Châteauneuf-du-Pape will also suitable for vegetarians and vegans because it goes very well with southern vegetables such as eggplants or zucchini, mixed baked vegetables or a vegetarian moussaka.
As to cheese, Châteauneuf-du-Pape will particularly go well with goat, ewe or cow milk cheese with a bloomy. It is also appreciated with a Saint Félicien or a Saint Marcelin.
The Châteauneuf-du-Pape with the main course
Its complexity and full-bodiedness make it a perfect complement to rich family dishes, especially those made with meat even if, as wee already mentioned it is quite possible to serve this wine with vegetarian dishes.
We will prefer tasty meats such as game served with mushrooms. One of the best dish that could be served with an aged Châteauneuf-du-Pape is the leg of lamb which will bring out the cooking aromas. You can also serve “Easter lamb” duck with boletus, wild boar or a beef stew with this red wine.
To sum-up favor an old Châteauneuf-du-Pape with lamb or game and rather a young wine for dishes cooked with mushrooms.
Which dishes can be served with white Châteauneuf-du-Pape?
The white vintage “les Cailloux” is a classy win that offers floral and citrus notes. There is a pleasant balance between roundness and acidity.
We recommend it with less powerful dishes than those served with the red one. It’s perfect with vegetarian dishes, fish and seafood. It will delight everybody’s buds when served with a fish, couscous or simply with grilled salmon and asparagus.
A young white wine from the Rhône valley will go quite well with dessert, if this dessert is fresh, for example, a fruit tiramisu (nectarines or citrus fruit). With the fruit-cheese-meal, dressing the white wine is best enjoyed with goat cheese as well as dishes of fresh vegetables served with a sauce.
We must not forget that this white wine is supple, so it can also be served with “foie gras toasts and stewed onions”.
